Apple Pie & Pumpkin Pie Bites in Minutes!
I LOVE the Holidays! Lots of amazing food. Turkey, honey-baked ham, sweet potatoes, green beans…BUT THEN THERE’S DESSERT.
I HATE the Holidays! Because I am always surrounded by so many yummy PIES for the holiday dinner, and they always look SO amazing.
BUT… I can never have any! =(

You can do this in minutes!
Just follow these steps:
All you need are
- Apple Pie Power Balls
- Pumpkin Power Balls
- Pinch of Cinnamon
- 1 Apple
- 1 tsp honey
- 1 can full fat Coconut Milk
- 2 tsp water
- 1 tsp lemon juice (optional)
Apple Pie Bites
To make the Apple Compote:
- Chop apple into small 1/4 inch cubes
- Heat 2 tsp water in small saucepan
- Add apples to saucepan, simmer two minutes
- Add 1 tsp honey to saucepan and coat the apples
- Add cinnamon, simmer another minute until you reach desired softness
- Note: if you want these to sit for a while before you present them and eat them, add lemon juice to prevent apples from browning
To Make the “Pie”:
- Smoosh (yes, smoosh!) an Apple Pie Power Ball for the crust (smoosh together TWO if you want a bigger bite)
- Top with Coconut Cream (refrigerate a can of full fat coconut milk for a few hours, open without shaking the can, and skim the cream off the top)
- Top the Power Balls crust with Coconut Cream and the Apple Compote
Pumpkin Pie Bites
- SMOOSH a Pumpkin Pie Power Ball for the crust (smoosh together TWO if you want a bigger bite)
- Top with Coconut Cream (refrigerate a can of full fat coconut milk for a few hours, open without shaking the can, and skim the cream off the top)
- Top the Power Balls crust with a sprinkle of Cinnamon
